The way Port is aged will determine how much contact it has with the wood and with the air and will shape its character and style.
Broadly, Ports fall into two categories: Wood aged Ports – those that age in oak casks or vats – and bottle aged Ports.
The vast majority of Ports are wood aged, remaining in cask, or vat, until they are deemed to be fully mature. These wines are bottled when ready to drink and require no further ageing.
